What is it used for?
Lady fingers are light and soft biscuits, roughly shaped like a large finger. They are usually used as the base for different desserts, for example, charlotte and tiramisu.
Yield: 30 lady fingers, 10-12cm long
Ingredients:
- 120g egg whites or 4 egg whites
- 70g powder suger
- 65g egg yolks – 3 egg yolks
- 40g starch
- 40g flour
- some icing sugar for the top
Step by step:
- Place egg-whites into a bowl and beat them until soft peak start to form.
- Add gradually sugar and continue beating until stiff and glossy.
- With spatula mix in carefully egg yolks.
- Sift flour and starch together and mix them slowly with a spatula into the egg-mixture.
- Transfer mixture to pipping bag and pipe out onto prepared baking sheet in a form of strips that look like lady fingers. Sift some icing sugar on top.
- Bake around 10 minutes at 200C.
- When ready take them off carefully from both sides with a spatula of the baking tray and cool down.
