Soft and light pancakes
When I was small, my grandma prepared pancakes from curdled milk and they were very tasty. So, having these memories in mind, I’ve replaced curdled milk with natural yogurt. The pancakes turn out very soft and almost melt in your mouth. I hope that you will try them!
Yield: 10-12, depending on size
Ingredients:
- 2 pots of 125g natural yogurt
- 2 table spoons of sugar
- 1 tea spoon of baking powder
- 1 cup of flour
- 1 egg
- olive oil
Step by step:
- In a medium size bowl, mix the yogurt with the egg and sugar.
- Add the baking powder and the flour. Mix it well together till you get a smooth consistency.
- Let it rest for 10min.
- Heat the pan with a little bit of oil in it.
- Once hot, take one big spoon of the mixture and pour it onto the pan. Make medium to small size pancakes.
- Bake for around 2-3 minutes from each sides or until they are brown.
- Serve with jam, sirup, Nutella or honey.
